BEEF SATAY SKEWERS WITH COUSCOUS
Preparation time: 5 minutes
Cooking time: 10 minutes
500 g diced rump steak cut into 3 cm cubes
250 g cherry tomatoes
1 yellow capsicum, cut into 3 cm pieces
250 ml satay sauce
Olive oil spray
200 g (1 cup) wholemeal couscous
Coriander leaves and baby salad leaves, to serve
1. Thread the beef, tomatoes and capsicum alternatively onto eight metal or bamboo skewers. Season the skewers with sea salt and pepper and brush with half the satay sauce, reserving the remaining sauce to serve.
2. Preheat a lightly-oiled barbecue or chargrill pan over medium-high heat and cook skewers for eight to 10 minutes, turning often, or until lightly charred and cooked through.
3. Meanwhile, prepare the couscous according to the packet instructions.
4. Serve the skewers drizzled with the remaining satay sauce, couscous sprinkled with coriander and baby salad leaves on the side.
COOKING TIP:You will need to soak bamboo skewers for fi ve to 10 minutes in cold water before using to prevent burning.
